Shrimp Country Boil

If you want a quick fix on a country boil that doesn’t take hours to make…you’ve come to the right place. I’m going to share my quick, easy and delicious shrimp country boil recipe.

Let’s get started!

Ingredients needed:

  • Shrimp
  • Andouille sausage (or your favorite smoked sausage)
  • Potatoes diced medium (red russet potatoes work best)
  • Corn on the cob (cut in halves)

Ingredients for seasoning:

  • 2 tsp. unsalted butter
  • Salt & pepper to taste
  • Minced garlic
  • 1/2 cup chicken broth
  • Cajun/creole seasoning (my choice is Tony Chachere’s) – be generous!
  • Olive oil

Instructions:

  • Heat oven to 400ºF
  • Evenly distribute corn, potatoes, shrimp and sausage in individual foil packets (use heavy duty foil sheets & cut evenly @ approx. 12×18 inches each)
  • Drizzle with olive oil and place 1/2 tsp. of butter in each packet and about 2 tbsp. of chicken broth
  • Season evenly and to taste with minced garlic, Cajun seasoning, salt and pepper
  • Seal foil packets by folding sides creating a packet to tightly contain ingredients and seasoning
  • Place packets in metal tray in oven. The steam created inside each packet will cook contents
  • Leave in oven for 30-35 min
  • Carefully verify that potatoes are soft and ingredients are fully cooked (steam will be very hot upon opening packet)
