Shrimp Country Boil

If you want a quick fix on a country boil that doesn’t take hours to make…you’ve come to the right place. I’m going to share my quick, easy and delicious shrimp country boil recipe.

Let’s get started!

Ingredients needed:

  • Shrimp
  • Andouille sausage (or your favorite smoked sausage)
  • Potatoes diced medium (red russet potatoes work best)
  • Corn on the cob (cut in halves)

Ingredients for seasoning:

  • 2 tsp. unsalted butter
  • Salt & pepper to taste
  • Minced garlic
  • 1/2 cup chicken broth
  • Cajun/creole seasoning (my choice is Tony Chachere’s) – be generous!
  • Olive oil

Instructions:

  • Heat oven to 400ºF
  • Evenly distribute corn, potatoes, shrimp and sausage in individual foil packets (use heavy duty foil sheets & cut evenly @ approx. 12×18 inches each)
  • Drizzle with olive oil and place 1/2 tsp. of butter in each packet and about 2 tbsp. of chicken broth
  • Season evenly and to taste with minced garlic, Cajun seasoning, salt and pepper
  • Seal foil packets by folding sides creating a packet to tightly contain ingredients and seasoning
  • Place packets in metal tray in oven. The steam created inside each packet will cook contents
  • Leave in oven for 30-35 min
  • Carefully verify that potatoes are soft and ingredients are fully cooked (steam will be very hot upon opening packet)

Chicharrones de Pollo

Fried Chicken with Puerto Rican flavors

If you’re talking about Puerto Rican comfort food you can’t leave out the delicious “chicharrones de pollo”. This dish has a delicious medley of Caribbean flavors. I prefer using chicken thighs for this dish because of the juiciness and how it retains flavors. Most people would prefer bone in and skin on chicken thighs, but I preferred boneless chicken thighs and it was equally as delicious and flavorful.

¡Pero vamos a lo que vinimos!

  • Ingredients to marinade chicken:
    • 2 lbs chicken thighs (cut in chunks if boneless)
    • 1 1/2 tbsp Adobo seasoning
    • 1/2 pack sazón with culantro & achiote
    • 1 tsp dried oregano
    • 2 tbsp white vinegar
    • 1 tbsp cooking oil
  • Instructions:
    • Place chicken in 1 gallon ziplock bag. Combine all ingredients and pour over chicken, close ziplock and coat well. Marinate for about 1hr in fridge.
  • Coating Ingredients:
    • 3/4 cup corn starch
    • 1 cup all-purpose flour
    • 1 tsp Adobo seasoning
    • 1/2 pack sazón with culantro & achiote
    • Cooking oil for frying
  • Cooking Instructions:
    • In a deep frying pan or dutch oven, heat cooking oil to 350º F.
    • While oil is reaching the desired temperature; mix marinated chicken into a new ziplock bag with all dry coating ingredients.
    • Make sure each piece of chicken is fully coated in the dry mixture.
    • Fry the chicken in separate batches, leaving enough space in between them to prevent them from sticking together.
    • Fry until golden brown, this process should take about 10-15 depending on size of chunk.
    • Make sure you place the chicken in a plate or bowl with a piece of paper towel to drain excess oil.
    • Serve immediately.
I chose to complete my meal by accompanying the chicharrones with yellow rice and beans and tostones (fried plantains).

¡Ya Llegaron! …el Frío Navideño y la Colaboración Medalla Light x Alexis Díaz

I’ve followed the work of Alexis Díaz for several years and also had the opportunity to enjoy one of his murals while visiting South Florida. His murals are very unique in the sense that he utilizes a brushed technique rather than spray painting his murals. This technique can be appreciated in the 4 unique Medalla Light cans created for the special edition release.

The designs include the Puerto Rican jíbaro, the beach, the musical rhythms and the maga flower (PR’s state flower) from the muralist’s perspective with his touch of mythology and fantasy that is often highlighted on his pieces.

Having Some Fun at the Ballpark

Hello fellow food lovers!

I’m always up for a challenge, and what a fun one this was. A friend of mine introduced me to the Minor League Baseball world and as part of that introduced me to Ben’s Biz Blog.

Who is Ben you might ask? Well let me tell you, Benjamin Hill is a writer for MiLB.com who travels the country visiting all Minor League Baseball ballparks and documents it thought his blog. Ben also has celiac, which prevents him from eating any gluten, so what does he do?, he selects “Designated Eaters” at every ballpark he visits to enjoy some ballpark offerings, and in return, give their personal reviews. That just sounded perfect for me!

So when I saw that he had put a call out for “Designated Eaters” for his trip to Florida, I jumped at the chance at becoming his “Designated Eater” at the Daytona Tortugas game. It’s not an easy selection process since he receives tons of applications and it takes months to finalize the selection of the roster for his road trips.  Once the whole roster is selected, it is announced on his blog and you just then anxiously wait for the date of your ballpark visit.

The City Beautiful is mobilizing in full force to help in the relief efforts to help those in dire need in Puerto Rico after Hurricanes Irma & María.

First try at cooking Indian food –

Kicking off the blog with a delicious homemade recipe.

I love trying all different types of foods, (at least once), so I can fairly say if I like it or not. This time around we decided to try a homemade recipe of a type of cuisine we’ve never attempted to cook before. We took on Tandoori chicken and Yellow Jasmine rice.

The quest to find all the spices and ingredients necessary for seasoning on the chicken was a tough one that involved a visit to approximately 4 different grocery stores (even those fancy organic ones), with no luck. Even though most of the spices are found at regular grocery stores, some specialty items such as the gram flour and the ginger garlic paste (see photo below) were only found at the local Indian grocery store.

For best results, we marinated the chicken with the spice mix overnight. You can find here the full recipe and video tutorial for the Tandoori chicken. While mixing all the ingredients it was obvious that this was going to be a spicy recipe but nothing that couldn’t be handled. It was delicious! The aroma coming from the oven definitely had that cinnamon, it’s almost Fall, smell to it.

To pair it off, we chose to make Yellow Jasmine Rice, because why not? The mix of flavors was just great, the smell throughout the house was delicious. A slice of avocado sealed the dish. Let me just tell you that it was a fun, fairly easy and delicious meal to make after getting home from work.
